Happy Monday friends! I hope you’re having a great day so far. I’ve had my cup of coffee and I’m ready to go! Today I wanted to talk a bit about my favorite almond milk: Malk Organics.

Malk Organics has a special place in my heart because the company is local to this great state of Texas. Not only that but Malk Organics makes sure their milks are made with the purest ingredients and no weird additives. I’m partial to their Pecan Malk Cold Brew but the sky is the limit with their different varieties! Here’s a delicious recipe that can be made with their Cashew Malk!

Malk Organics

Butternut Squash Tortellini

Ingredients:

  • 1 cup butternut squash puree
  • 1 cup Unsweetened Cashew Malk
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon lemon pepper seasoning
  • 2 cups tortellini, uncooked
  • 16 oz. fresh spinach
  • 2 tablespoons fresh parsley, chopped

Instructions:

1. Add butternut squash puree, Unsweetened Cashew Milk, nutmeg, paprika, and salt to large skillet on medium heat. While heating, stir ingredients to combine. Add about 1/4 teaspoon of lemon pepper seasoning to taste. Add spinach on top of mixture and cover with lid, remove from heat. Let spinach wilt in pan, covered, off heat.

2. While spinach wilts, bring medium pan of water to boil, add 2 cups of uncooked tortellini and cook according to package directions. Once tortellini is cooked, drain the water.

3. Add tortellini to skillet and stir to combine. If sauce is too thick, add Unsweetened Cashew Milk to thin it. Season to taste.

4. Serve topped with fresh parsley and enjoy!
