Breakfast Recipes!

Breakfast is the most important meal of the day. I am NOT one of those people that can skip  breakfast. I wake up hungry! Breakfast is the popular meal in our household. I love mixing it up and trying out new recipes.

My breakfast muffins are one of my favorite recipe. Our mornings get hectic due to my husband’s work schedule so I make theses ahead of time. These are super easy to customize in case you have someone who doesn’t like veggies.

Breakfast Muffins
  • Eight eggs, scrambled
  • Twelve slices of ham/turkey
  • 1/4 cup of shredded cheese
  • Veggies/salsa if desired
  1. Spray your muffin tin with cooking spray and place one slice of ham or turkey in each tin
  2. Scramble your eggs and mix in cheese and veggies
  3. Pour egg mixture in each up evenly
  4. Cook at 350 for 25 minutes

Give these a try and make them your own! These can be made ahead and heated up in the microwave throughout the week!

Banana Pancakes
  • 1/2 banana
  • 1 scoop of vanilla protein powder (I use Unico Nutrition)
  • 1 tablespoon of almond milk
  • 1 teaspoon of cinnamon
  1. Mash your banana in a bowl and add the almond milk
  2. Slowly add the protein powder and mix well
  3. Add in the cinnamon and more almond milk if needed to crate a batter
  4. Spray pan with cooking spray and heat
  5. Pour batter into pan and cook until golden brown
  6. Flip and repeat until done.
  7. Top with agave nectar and fruit or whatever toppings you like!
Breakfast Bowl
  • Two eggs
  • 1/2 cup diced ham
  • Sliced veggies (spinach, tomato, peppers)
  • 1 tablespoon shredded cheese
  1. Scramble eggs and cook
  2. Slowly add diced ham until warm
  3. Add veggies and continue cooking until veggies are soft
  4. Transfer mixture to bowl and top with shredded cheese
